Recipe: Bumbleberry Overnight Oats

Soak up the remnants of any jelly jar with this simple recipe!

Overnight Oats w/ PB & J Walls

Being on the road, we are currently without a kitchen. We’ve been eating a lot of PB&J sandwiches 😅 (or almond butter & jelly). This recipe features bumbleberry – a mixture of strawberries, blueberries, and red raspberries – which I recently tried for the first time, However, you can modify this recipe with your own choice of butters, jellies, yogurts, milks, and juices.

I just used what we had in our little mini fridge. If you make this at home, you can even throw in/on toppings like fruit, nuts, and chocolate!

I’ve been following Meg Unprocessed for a few years, and a food sustainability practice she shared involved creating overnight oats in leftover butter and jelly jars. She emphasized how this kind of creates a “wall” flavoring effect for your oats. After having it on the back-burner, I decided to finally give it a try! I have made overnight oats before, though I was a little rusty the last time I made them and they turned out watery. Ultimately, you will find your own desired consistency – and the best way is to experiment!

Ingredients

  • The Huber Family’s Bumbleberry Spread (Sugar, Strawberries, Blueberries, Red Raspberries, Pectin, Lemon Juice, Citric Acid)
    • Made by the C. Smith Family in Central Wisconsin without artificial preservatives, flavors, or colors.
  • Rolled Oats
  • Oat Milk Yogurt
  • Orange Carrot Juice

Directions

  • Reduce food waste & try this when you finish a jar!
  • Take a fork and create your own “walls” with the remaining butter or jam.
    • I added peanut butter “walls” too!
  • Cover the bottom of the jar with a thin layer of rolled oats.
  • In a separate container, mix rolled oats, yogurt, juice, peanut butter, and any other desired additions.
    • Build on this recipe with banana, walnuts, or chocolate chips!
  • Pour mixture into jar.
  • Top with thin layer of rolled oats & any other desired toppings.
  • Seal jar and refrigerate overnight.
  • Enjoy for breakfast!

I guess that I prefer my oats on the thicker side! This is how they turned out in the morning. I honestly get full from just a few bites! Peep my husband who prefers them with a little more liquid. If you decide you want to change the consistency, you can always add more liquid, mix, and re-refrigerate.
