For our last night in Boulder County, we decided to dine on Pearl Street. Leaf Vegetarian Restaurant is dedicated to creating an outstanding and creative vegetarian dining experience. Their passion for fresh, local ingredients inspired them to create Three Leaf Farm in Lafayette, CO – which provides seasonal, organic, and freshly-harvested produce, herbs, and free range eggs.
I love that Leaf is committed to cultivating sustainability, which is great for consumers & for the community.
Honestly, the Rigatoni di Barbabietola with rigatoni pasta, roasted beets, shaved parmesan, spinach, almonds, and butter sauce was one of the best pastas I have ever had! And it was crazy to think that this was a vegetarian dish. I hope to remake this soon!
